Extra virgin olive oil is the only fat that contains high levels of antioxidants known as polyphenols. Polyphenols are what makes extra virgin olive oil, without question, the healthiest of all fats.

Dietary fats are essential to life as an energy source and because they improve the absorption of nutrients and improve cell growth. In addition, they positively affect the retina, nervous system, and the creations of lipoproteins and essential hormones.
