For many, when you think of olive oil and food - the first thought that comes to mind is salad!
As we are huge salad lovers, we wanted to share some simple, yet delicious salad dressing made with olive oil. Once you learn how to make your homemade salad dressings, you won't go back to anything else! So simple to make and requires only a few ingredients. A big plus for your health is that these dressings have no preservatives or additives, unlike store-bought salad dressings.
It is always up to you to tweak your salad dressing as you like. The best part is that it takes 5 to 10 minutes to make homemade salad dressings.
1. Classic French salad dressings - vinaigrette
Ingredients:
- 120 ml extra virgin olive oil
- 40 ml vinegar of your choice
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 2 medium garlic cloves pressed
- pinch of salt and freshly ground black pepper to taste
Instructions: Whisk all ingredients until completely mixed together.
Food pairing: greens, vegetables and fruits.
Storage: You can keep it for 7 to 10 days in the refrigerator.
2. Creamy yogurt salad dressing
Ingredients:
- 80 ml extra virgin olive oil
- 90 g Greek yoghurt
- 2 tbsp fresh lemon juice
- 1 tbsp white wine vinegar
- ½ tsp sugar
- 2 garlic cloves minced
- ½ tsp dried dill
- a pinch of salt and freshly ground black pepper to season
Instructions: Combine all of the ingredients in a bowl and whisk to combine. Refrigerate until ready to serve.
Food pairing: cucumber salad, romaine lettuce or other leafy crunchy salads, grilled meat.
Storage: You can keep it for 3 to 4 days in the refrigerator.
3. Caesar salad dressing
Ingredients:
- 120 ml extra virgin olive oil
- 1 garlic clove pressed
- 50 g finely grated parmesan
- 1 egg yolk
- 1 tbsp freshly squeezed lemon juice
- 4 anchovies
- 1 tsp Worcestershire sauce
- salt and pepper to taste
Instructions:
- Combine parmesan, egg yolk, anchovies, garlic, lemon juice and Worcestershire sauce in a food processor and mix to combine.
- Slowly drizzle olive oil until you get a smooth paste.
- Season with salt and pepper to your taste.Â
Storage: You can keep it in the refrigerator for up to a week.
