Istria is a region located at the very north of the beautiful Adriatic sea. Relatively small area, famous for its natural beauties and its exceptional food. It has been known widely as a natural habitat of the most precious sorts of truffles in the world.
Truffles in Istria
Truffles are grown underground and exclusively in unpolluted nature and clean environment, in symbiosis with certain tree species.
Istria is home to several types of truffles:
- the Istrian white truffle (Tuber magnatum pico)
- black truffle (Tuber aestivium)
- black truffle (Tuber brumale)
Guinness Book of Records
Truffles are found in the area for centuries, but a turning point in recognizing this incredible truffle happened 20 years ago. On the 2nd of November 1999, Giancarlo, together with his dog Diana found a white truffle weighing 1.310 grams in the Motovun forest. A giant truffle (named Millenim) entered the Guinness Book of Records, still registered in the Guinness World Records as the biggest. Once and for all directed the entire Zigante family towards the advancement of the status of Istrian truffles.
‘Giancarlo never sold that record white truffle, so later he could not boast about having earned millions from it. Instead, he decided to serve that truffle cut in slices at a dinner for hundred guests during which he boasted in public with the size of his record tuber which Guinness perpetuated.’
Giancarlo Zigante spent life truffle hunting, for the past 25 years, he dedicated himself to familiarize with truffles all those who don’t have the luck to live in the Centre of the world of the truffle as he does.
The truffle flavour is the most intense at night or early dawn, so this is when they are usually harvested. Trained dogs accompany truffle seekers. After the dog smells the truffle, its master digs it out using a special tool. Just like gold locations, locations rich in truffles are kept as a family secret.
Zigante factory - from the forest to the table

Immediately after harvesting, fresh truffles are transported to the Zigante factory, one of the most modern production facilities of this type in Europe. Truffles are processed in a controlled environment, with the addition of exclusively natural preservatives, such as salt and extra virgin olive oil.
