In Italy, known as "farro", this ancient and rich Italian grain, in taste similar to barley with an especially nutty flavour, is often referred to as the ancestor of modern wheat.
Farro is nutritious grain full of proteins, vitamins A, B, C, E, mineral salts and is an excellent source of fibre, antioxidants and polyphenols. In addition, due to its unique gluten structure, farro is very easily digested, even by those who have difficulty with other wheat products.
Use it to make different types of bread, focaccia, pancakes, pasta and berry pies.
