While fresh rosemary is always our first choice, dried rosemary works quite well as a great alternative. The substitution ratio of fresh to dried rosemary is one-to-one.
Food pairing: Rosemary goes well with poultry, lamb, fish, meat, pork, veal, especially when they are roasted. Rosemary enhances the taste of tomatoes, peas, spinach, squash, mushrooms, eggs, lentils and cheese.
